Food Analysis

Introduction

Our Laboratory of Food Analysis aims to evaluate food functionalities and quality based on a variety of analytical approaches. We mainly focus on three research topics as described below :

Research Theme

  1. Development of Functional Foods (Hypertension, Diabetes, lifestyle-related diseases)and elucidation of physiological mechanism(s)
  2. Absorption of bioactive compounds and their mechanism
  3. Evaluation of behaviors of flavor components and taste components in foods including sorption of the components into plastic film (Diffusion, Permeation, Solubility, SP value, Polymer)
